Tiramisu


Tiramisu is a very popular coffee flavored Italian custard dessert. Tried this recipe for the first time and I am loving it and very excited to share the recipe with you all. Do try and let me know how you like it in the comments. Give your taste buds a treat!

Ingredients


Sponge Cake

Eggs 2 Separated (egg white & egg yolks) (room temperature)
Sugar 1/2 cup
All purpose flour 1/4 cup
Corn Starch 1/8 cup
Salt 1 pinch

Mascarpone Cream & Assembly

Mascarpone 1 cup
Sugar 1/4 cup
Egg Yolks 2
Heavy Cream 1 tbsp
Salt 1 pinch
Freshly brewed strong coffee 1/4 cup (cooled)
Unsweetened cocoa powder 2 tbsp

Serving Size 4

Preparation


Sponge Cake

  1. Preheat oven to 375 F and prepare baking pan by lining it with parchment paper.
  2. In a large bowl beat egg whites until just mixed using an electric mixer on low speed.
  3. While gradually increasing speed to medium , slowly add 1/4 cup sugar and beat until a stiff meringue forms. Transfer this to another bowl and chill until we do the next step.
  4. In the same messy bowl, beat together egg yolks, 1 tbsp water and remaining 1/4 cup sugar on high speed until a fluffy mix forms.
  5. Add the meringue to this mix and gently fold using a rubber spatula until just combined. Don't over mix as you don't want to loose the fluffiness.
  6. Sift together flour, corn starch and salt into a medium bowl and gently fold it into the egg mixture until no dry spots remain. Transfer the whole mix to the prepared pan.
  7. Bake the cake for 15-20 min. As oven temperature varies from oven to oven, make sure to bake until the top is golden brown. 
  8. Cool the cake completely and transfer it to a cutting board, Cut the cake into half horizontally/crosswise.

Mascarpone Cream & Assembly

  1. In a large bowl, beat together mascarpone, sugar, egg yolks, heavy cream and salt on low speed. Gradually increase the speed to medium as the mixture becomes stable and beat until soft peaks form.
  2. Spread a thin layer of mascarpone cream in a shallow serving dish.
  3. On top of it, place half of the sponge cake. Soak cake with half of the expresso using a spoon.
  4. Spread with half of mascarpone cream and top with the other half of cake and soak again with remaining expresso.
  5. Spread the remaining mascarpone cream.
  6. Using a very fine strainer, gently shake cocoa powder on top of tiramisu until it's completely covered. Enjoyy!!
