Strawberry Ice-Cream




Summers have started and so does the craving for ice-cream. Isn't it awesome when you can make your own ice-cream at home? Are you already nodding in Yes? 

Why the wait then, let's get started with this wonderful recipe of strawberry ice-cream. You can use any fruit of your choice, preferably seasonal fruits, for the freshness and fruity blast in your mouth.


I have used lemon in my recipe, not just to introduce a hint of sourness but to give a hint of freshness too. Believe me, it makes a lot of difference when you add a hint of lemon juice to your ice-cream. 

I have also used honey to add the silky texture to my ice-cream. If you or your kids are allergic to honey, you can skip this part. 

Ingredients

Fresh and roughly chopped Strawberries 2 cups
Sugar 1 cup (or less if strawberries are sweet)
Honey 2 Tbsp
Lemon juice 2 Tbsp
Heavy cream 1 cup
Vanilla extract 1/4tsp


Preparation

  1. Mix chopped strawberries with sugar, honey and lemon juice and keep aside for at least 30 min. 





  2. If you don't like the fruit chunks in ice-cream and like it smooth, you can blend it to a smooth paste. I like fruit chunks in my ice cream, so I simply crushed the strawberries with a fork.
  3. Now in a separate bowl, pour 1 cup of heavy cream.
  4. Add vanilla extract.
  5. Beat it until peaks are formed.
  6. Now slowly fold the strawberry mix into it, until thoroughly mixed. Don't over do it. Follow fold and cut technique to maintain the whipped cream's fluffiness.


  7. Transfer to a  suitable bowl for freezing.
  8. Freeze the ice-cream for 6-8 hours.
  9. Take out the ice-cream 5-10 min in advance before serving. Enjoy and let me know how you liked the recipe.
