Uttar Pradesh and Bihar's very own staple food Batti/ Litti Chokha, which was originated in Bihar and now tasted and liked by many other states too. But it is still unknown and untasted in many parts. This is an attempt to make this recipe reach to you all, with step by step description.
What is Batti/Litti? - It's a dough ball, made of whole wheat flour, stuffed with sattu (roasted gram flour powder) and slow baked over fire generated by coal or wood or most preferably cow dung cake. Ancient way of baking in India.
What is Chokha? - Eggplant(Baingan/ Brinjal), tomatoes, potatoes roasted/baked on coal/wood/cow dung cake and mashed and mixed with fresh coriander leaves, garlic and mustard oil.

Ingredients
You will require a fire pit/griller to start fire and cook/grill.
Chokha
Large eggplant 1
Medium potatoes 4
Tomato 2
Minced garlic 1-2 Tbsp
Minced green chili 5-6 (or as per taste)
Salt to taste
Mustard oil 1 Tbsp
Chopped cilantro leaves ¼ Cup
Plain Batti/Litti
Whole Wheat flour dough
Clarified butter / ghee

Preparation
Chokha
- Start fire in fire pit/tandoor. Let the charcoal burn until they are covered with white-gray ash, it takes approximately 15 minutes. Spread it out to put our vegetables on it.
- Poke eggplant at several places using knife or fork, to avoid it from bursting while baking. Wash potatoes and tomatoes thoroughly.
- Place eggplant, potatoes and tomatoes on hot coal.
- Keep turning and checking the vegetables every 4-5 minutes.
- When the eggplant and tomatoes ae no longer hard and soft from all sides, remove them from heat and place on a baking tray or any bowl.
- Poke potatoes using a toothpick or skew, to check if tehy are soft and done. Take out potatoes too.
- Let the vegetables cool enough to work on with hands.
- In the meanwhile, finely chop garlic, green chillies and coriander leaves.
- Peel and mash baked eggplant, potatoes and tomato together and add minced garlic and green chili to it. Further add mustard oil, salt and chopped cilantro. Mix everything thouroghly.
- Chokha is ready to be served with hot batti/litti.
Plain Batti/Litti
- Make 6 equal round balls out of dough.
- Place batti(s)/ litti(s) on hot coal carefully and keep turning them every 30 sec so all sides get cooked evenly and it doesn't burn or get chewy.
- After approx. 10 min, insert a tooth pick into batti/litti, if it comes out clean, your batti(s)/ litti(s) are ready.
- Take it out in a bowl or plate and pour over generous amount of ghee/ clarified butter.
- Top it with ghee and enjoy with chokha.

Tips:

- If available, you can stuff sattu (roasted gram flour) mixture in baati.
- Poke eggplant/ baingan using a knife or fork, else it will burst while cooking.
- Don't hesitate with ghee/clarified butter, as opposed to other fats, ghee is actually help reduce the risk of heart diseases, has cancer fighting liquids and can help you lose weight too.
- When coal is covered with white-gray ash, it's ready for grilling purposes.
