Ingredients
Boiled Eggs 4-5
Tomato puree 1/2 cup
Ginger garlic paste 1 1/2 tbsp
Coriander seeds 1/2 tbsp
Salt 1 tbsp (or to taste)
Turmeric powder 1/2 tbsp
Oil 2 1/2 tbsp
Coriander powder 2 tbsp
Garam masala / Everest egg curry masala 1 tbsp or more if you want it more spicy
Cilantro leaves for garnishing
Preparation:
- Peal the eggs and make slight vertical cuts to allow flavors to mix into eggs.
- Heat oil in a wok/pan, and add coriander seeds.
- After 10-15 sec, add chopped onions and fry till golden brown.
- Add ginger garlic paste and fry for another 30 sec.
- Add tomato puree, salt, turmeric powder, coriander powder, masala and keep stirring and adding a tbsp of water every min for next 6-7 min.
- Now add the eggs and mix well and cover cook it for 8-10 min for eggs to absorb spice flavors nicely.
