Egg Masala

Ingredients

Boiled Eggs 4-5
Chopped onion 1 large
Tomato puree 1/2 cup
Ginger garlic paste 1 1/2 tbsp
Coriander seeds 1/2 tbsp
Salt 1 tbsp (or to taste)
Turmeric powder 1/2 tbsp
Oil 2 1/2 tbsp
Coriander powder 2 tbsp
Garam masala / Everest egg curry masala 1 tbsp or more if you want it more spicy
Cilantro leaves for garnishing

Preparation:

  1. Peal the eggs and make slight vertical cuts to allow flavors to mix into eggs.
  2. Heat oil in a wok/pan, and add coriander seeds. 
  3. After 10-15 sec, add chopped onions and fry till golden brown.
  4. Add ginger garlic paste and fry for another 30 sec.
  5. Add tomato puree, salt, turmeric powder, coriander powder, masala and keep stirring and adding a tbsp of water every min for next 6-7 min.
  6. Now add the eggs and mix well and cover cook it for 8-10 min for eggs to absorb spice flavors nicely.
