Gajar Ka Halwa / Carrot Pudding


Ingredients

Grated Carrot 1 Kgs / 2 lbs
Milk 1 Ltr / 0.3 Gallon

Sugar 4 cup
Dry Fruits cashew, raisins, almond etc.
Clarified Butter/Ghee 1/2 cup
Cardamom powder 1/4 tbsp


Preparation

  1. Heat a big pan and add the grated carrots & milk. Stir and cook it on medium heat.
  2. Keep stirring the mixture scraping the sides of the pan time to time.
  3. When the mixture starts to thicken and milk is noticeably reduced, add clarified butter, sugar & cardamom powder. Stir well and reduce the heat.
  4. When it's almost close to drying up, add all dry fruits and stir well.
  5. Halwa is ready when the milk completely evaporates.
  6. Serve hot or refrigerate it in a air tight container. Heat and enjoy for a week or two.
