Ingredients
Cubed eggplant 2 cups
Chopped green chili
Salt to taste
Coriander powder 1 tbsp
Garam masala 1 tbsp
Turmeric powder 1/4 tbsp
Red chili powder 1/2 tbsp
Anardana powder 1 tbsp
Aamchur powder 1/4 tbsp
Cumin seeds 1/4 tbsp
Fresh coriander leaves for garnishing
Oil 2-3 tbsp
Preparation
- In a bowl, mix together all (eggplant, potato, green chili, coriander powder, salt, garam masala, turmeric powder, red chili powder, anardana powder and amchur powder) ingredients and leave for 15-20 min.
- Heat oil in a pan, add cumin seeds and let it sputter.
- Now add the prepared mix, stir and cover cook until potatoes are soft.
- Garnish with coriander leaves and serve with Indian bread.
