Achari Baingan

Ingredients 

Cubed eggplant 2 cups
Cubed potatoes 1 cup
Chopped green chili 
Salt to taste 
Coriander powder 1 tbsp 
Garam masala 1 tbsp 
Turmeric powder 1/4 tbsp 
Red chili powder 1/2 tbsp 
Anardana powder 1 tbsp
Aamchur powder 1/4 tbsp 
Cumin seeds 1/4 tbsp 
Fresh coriander leaves for garnishing
Oil 2-3 tbsp 

Preparation 


  1. In a bowl, mix together all (eggplant, potato, green chili, coriander powder, salt, garam masala, turmeric powder, red chili powder, anardana powder and amchur powder) ingredients and leave for 15-20 min.
  2. Heat oil in a pan, add cumin seeds and let it sputter.
  3. Now add the prepared mix, stir and cover cook until potatoes are soft.
  4. Garnish with coriander leaves and serve with Indian bread.
