Khadna is an Indian savory dish, which tastes best when served with paratha and steamed white rice. In this recipes, besan, mixed with other spices and ingredients and made into a thick paste which is cooked and cooled into squares shapes and deep fried and served with gravy. Let's get to the recipes real quick.
Ingredients
For Besan Squares
Water to make thick batter
For Gravy
Chopped Onions 3/4 cup
Chopped Tomatoes 1 cup
Chopped Green Chilli
Ginger-garlic paste 1 Tbsp
Asafetida/ heeng 1/2 Tsp
Cumin Seeds 1 Tsp
Red Chili Powder 1 Tsp
Garam Masala 1 Tbsp
Coriander Powder 2.5 Tbsp
Cumin Powder 1/2 Tbsp
Turmeric powder 2 Tsp
Salt to Taste
Oil for cooking
Coriander Leaves to Garnish
Method
Besan Squares
- Mix together besan, cumin powder, coriander powder, salt, turmeric, garam masala, chopped onion, chopped green chili and water to make a thick paste.
- Heat oil in a pan and pour over the besan mix. Continuously stir and scrape the sides of the pan to avoid any lumps and allow it to cook evenly.
- Once it's no longer sticking to the sides of the pan and formed into a dough, turn off the heat.
- Grease the back of thali/ plate or any flat surface and spread over the besan dough prepared in the previous step.
- Let it cool down and cut it into squares.
- Now is the time to fry these besan squares, for which heat oil in a pan and add besan squares to oil slowly. Cook it on medium heat until it turns into nice golden brown color. It should be crispy on the outside and soft inside, so it's very important to fry it slowly on medium heat.
- Besan squares are ready now.
Gravy/ Curry
- Remove excess oil from the pan and heat the remaining oil (enough for the gravy).
- Add cumin seeds and let it sputter for 30 seconds.
- Add chopped onions and cook until it's golden brown.
- Add green chili and ginger garlic paste.
- Add chopped tomatoes and cover cook for a min or until it softens.
- Now, add salt, turmeric powder, coriander powder, garam masala, cumin powder, red chili powder and 2 Tbsp of water and cook the masala until oil separates.
- Add 2-3 cups of water and cover and let it boil for 5 min.
- Add the besan squares to the gravy, cover the pan and turn off the heat/gas.
- Garnish Khadan with chopped coriander leaves and serve hot with paratha and steamed white rice. Enjoy!!
