Besan Laddo | Rakshabandhan | Rakhi Special

Looking for some sweets for your brother this rakshabandhan and not sure to buy it from outside due to this COVID situation, why not make something yourself?
It will be healthier, full of love and safe option too.
I made Besan Ladoo this Rakshabandhan/Rakhi and going to share the same with you all.
Below is the step by step instruction with pictures. I hope you like the recipe.

Ingredients

Besan Gram Flour 1 Cup + 3 Cup
Powdered Sugar 21/2 Cup
Crushed Almonds & Cashew nuts 1/2 Cup
Ghee/ Clarified Butter 1 Cup
Cardamom Powder 1/2 Tsp

Method

  1. Dry roast 1 cup of besan on low-medium heat until the raw smell of it goes away and the color changes turn a little dark. Transfer it to a bowl and let it cool down.
  2. Heat the same pan again and add 1 cup of ghee.
  3. Add 3 cups of besan to ghee and stir continuously, on low to medium heat. Don't worry if it looks too dry at this point. Keep stirring to cook it thoroughly.

  4. You will notice the ghee starts to separate as the besam gets cooked, more and more.

  5. When the besan is cooked and there is no raw smell, add powdered dry fruits. If you like the crunchy and nutty texture in your ladoo, just roughly chop the dry fruits instead of powdering.
  6. Add cardamom powder and mix well.
  7. When everything is mixed well and there besan mix looks like smooth and thick batter, turn of the heat and transfer this mix to a mixing bowl. Choose the size of the bowl wisely, as we will be mixing powdered sugar and the dry roasted besan with the ghee roasted besan in this bowl.
  8. To this bowl add powdered sugar.
  9. Sift the dry roasted besan and mix to this bowl.
  10. Now start mixing everything together, be careful, as it will be very hot at this point. Use a spoon or spatula if it's too hot to work with. You will have to work on it fast, it gives better result when worked up on while still hot.
  11. Once it's mixed completely and there are no more lumps, we will start making the ladoos.
  12. Get some nuts ready, to garnish on top of the ladoos.
  13. Take a scoop of the mix in you hand and tightly press in your fist in repetitive motion and give it a shape of a ball/ ladoo.
  14. Top the ladoo with either cashew or pista.
Surprise your loved ones with this ladoo and show offs your culinary skill.
