Street Style Chaat


Who doesn't love street food? Street style chaat has always reminded me of my childhood days and my home. I always wonder what magic does that "Chaat wale bhaiya" add to the chaat to make it that mouthwatering and extremely yummy.

Like any other Indian dish, Chaat also has many versions based on the region you live in. I was born and brought up in UP and while growing up I realized, not all cities of UP have the same taste for Chaat.
Today, I am going to take you all to the delish journey of Varanasi/ Kaashi's street style chaat's recipe. A burst of taste, which has so many flavors from salty to sour to spicy to hot and a texture of crunch and softness. 
Without any delay, let's get to the ingredients and recipes real quick.
We will need the below ingredients for Chaat.

Ingredients


Potatoes 4 (Medium)
Dried Peas 2 Cups
Chopped Onions 1 Cup
Chopped Tomatoes 1 Cup
Chopped Green Chilli 2 Tbsp
Grated Ginger 1 Tbsp
Chopped Coriander Leaves
Oil/ Ghee For Frying
Salt/ Black salt To Taste
Chaat Masala
Red Chilli Powder
Cumin Powder
Coriander Powder
Garam Masala 1/2 Tbsp

Method


  1. Boil potatoes and peas separately. Potatoes should be soft enough to be mashed and peas should be cooked but not be too mushy. Don't forget to add salt while boiling peas.
  2. In a large bowl, mash the potatoes using a fork, spatula or your hands. To this add salt, garam masala powder and red chili powder. And mixed everything together.
  3. Make alloo tikkis (shape it like a disk as shown in the picture). 
  4. Heat a flat pan or tawa, add 2 Tbsp of ghee and place Tikkis on it and let it cook on one side until slight golden and then flip to cook the other side.
  5. While the other side of the tikki is still cooking, move all the tikkis away from the center of the pan to make some space to prepare chaat in street style.       
  6. Add ghee to the center of the tawa/ pan, add chopped onions, tomato & green chili and grated ginger. Mix and stir these together until tomatoes are soft.
  7. Now add boiled peas to it. Mix it well.  
  8. Further add cumin powder, red chili powder, coriander powder, chaat masala, salt. Mix everything well. Do check the salt in tikki and boiled peas before adding any further salt here. If it tastes good already, don't add any salt further.                                                       
  9. Slide 1 or 2 tikkis from the sides to the center of the pan and using spatula, using chopping motion, mix it with the chaat. Mix everything completely.
  10. Add 1/4 cup of water and mix well. This is needed because the chaat dries out fast as it cools down, so making it a little watery (not much) will help the chaat from drying up. 
  11. Transfer the prepared chaat in a serving dish.
  12. Garnish with chopped onions, chopped tomatoes, minced green chilies and coriander leaves and serve hot.
