Arbi Ke Patte Ke Pakode (Patra)


It is an Indian appetizer which is made from Arbi leaves which are rolled, steamed and shallow fried. Arbi Patte which is also known as Colocasia leaves are layered with gram flour and spices paste and topped with multiple leaves to make this snack. Ingredients


Arbi Patta (Colocasia leaves) 4 large
Gram flour 1 cup

Ginger garlic paste 1 tbsp
Green chili paste 1/2 tbsp
Coriander powder 1/2 tbsp
Red chili powder (optional) 2-3 tsp
Garam masala1/4 tbsp
turmeric powder a pinch
salt to taste
Thread to tie

Serving Size: 4


Preparation

  1. Wash Arbi leaves and pat dry. Now cut the hard stems making sure you don't cut the leaves. Lay them over a flat work surface.
  2. In a bowl, mix together all dry ingredients first. Then mix ginger garlic and green chili paste and a little water, just enough to make a very thick paste.
  3. Now lay down one Arbi leave(light color upside), and coat it with a layer of the gram flour paste.

  4. Place another leaf on top of it and repeat the same for all the leaves.
  5. Before rolling the leaves into a roll, fold it from both the sides(lengthwise) to avoid paste dripping from sides.
  6. Tie the roll with a thread to avoid opening.
  7. Steam cook the prepared roll for 10 min. Check with a toothpick if it comes out clean, it's cooked. 
  8. Cool it at room temperature and cut equal pieces as shown in picture. Don't attempt to cut it while still hot, you will end up with broken pieces.
  9. In a frying pan, heat a lil oil, add mustard seeds and let it sputter. Now add the arbi pakoda pieces and fry them on both sides.
  10. Arbi Ke Patte ke Pakode are ready to be served with green chutney or tomato ketchp.
Note: I used a large sauce pan (filled with 1 inch of water) and placed the roll on a large flat strainer balanced on 3 small steel bowls.
