How to Make Mango Ice-Creama at Home Without an Ice-Cream Maker?



Have you been disappointed by your efforts to make homemade ice cream (without an ice cream maker) in the past? Well, I was one of you too until I tried this. Don't believe me? Try it yourself.

Ingredients


Mango Puree 2 Cups
Condensed Milk 1 can/ 395 gms
Whipping Cream 2 cups

Serving size: 6

Preparation

  1. Peel and dice mangoes and puree it in a blender.
  2. Pour puree into a non stick pan and stir cook constantly for 10 mins or until it reduces to half. Best way to check is to drag a wooden spatula/ spoon across the pan and the path remains there for a sec. Cool down the puree.
  3. Whisk together the cooled down mango puree with condensed milk until mixed well.
  4. Beat whipping cream until stiff peaks form.

  5. Take a scoop of whipped cream and fold it into the mango mixture. This is just to lighten up the mixture.
  6. Now add the mango mixture to the whipped cream and gently fold until it's lump free. Don't mix vigorously as you don't want to loose the trapped air.
  7. Pour into a glass container and place a piece of parchment paper on the surface and then close the lid.
  8. Freeze for 12+ hours.

  9. Remove parchment paper and stand it for 5 min to soften a little bit and then scoop and serve. If kept in refrigerator for more than 24 hours, you will need few extra min to soften it.
