Fail Proof Carrot Pickle Recipe | Gajar Ka Achar/Achaar


Pickle! Although many countries enjoy it but the connection India has with Pickles is beyond words. Indians can pickle almost anything be it carrot or ginger or garlic or mango or chilli or chicken or fish or tomato or what not. And when I talk about Indian Pickles, it's not just vegetables fermented in vinegar, it's a mix of lots of flavors usually soaked in mustard oil.
Pickling is an art and tradition well practiced in India since long ago, which is diminishing over time. Let's keep the legacy alive and learn to pickle. Some pickles require cooking some don't, I am sharing the recipe of a pickle which requires cooking: Carrot Pickle! This a fail proof recipe and you are going to love it.


You will need the below ingredients to get started. 

Ingredients






Sliced Carrots 1½ Cups (Approx. 2 inches in length, moderately thin)
Sliced Ginger ¼ Cup (Approx. 2 inches in length, thin)
Green Chillies ¼ Cup (Approx. 1 inch in length)
Red Chilli Powder 1 Tbsp (More or less based on how hot you like)
Turmeric Powder ½ Tbsp
Salt 1 Tbsp (or as per Taste)
Mustard Oil 3 Tbsp + 4 Tbsp
Mustard Seeds ¾ Tsp + 1 Tsp (For powdering)
Fenugreek Seeds ¼ tsp (For powdering)
Lemon Juice 3 Tbsp
White Vinegar 1 Tbsp
Hing/ Asafetida ¼ tsp


Instructions

  1. Wash, peel and slice carrots. Slice Ginger too.
  2. Chop green chillies approx. 1 inches long. You can chop chillies in smaller sizes too or mince it altogether. It depends on how you like it.
  3. Dry roast fenugreek seeds and powder them along with mustard seeds (1 Tsp).
  4. Heat mustard oil in a pan.
  5. Add ginger, carrots and green chilli and sauté on medium heat for approx. 1-2 min to dry up the moisture.
  6. Turn off the heat and transfer it to a plate or bowl.
  7. Heat the remaining oil in the same pan.
  8. Add mustard seeds and let it sputter.
  9. Add Red chilli powder.
  10. Add turmeric powder.
  11. Add fenugreek & mustard seed power. Stir and mix everything.
  12. Add salt.
  13. Add heeng/ asafetida powder too.
  14. Cook the masala for 1-2 min. Make sure you don't burn the masala, keep the flame/ heat low.
  15. Now add the sautéed vegetables to it and mix everything thoroughly.
  16. Add vineger and lemon juice, mix.
  17. Let the pickle cool down completely before storing it in the jar.

Tips:
  • Pat dry carrots, ginger and green chilli before staring, this will ensure longer storage life.
  • Always store pickle in air tight container.
  • Never use moist or wet spoon to spoon pickle out of jar, it will go bad. Moisture is the enemy here!
  • Oil and masala usually gets settled down to the bottom of the jar, so make sure you shake the pickle jar once in a while to mix everything. The vinegar and lemon helps preserving the achar.
  • Pickle tastes better as days pass.
  • You can use any other vegetables too with this recipe.
