Eggless Chocolate Banana Cake Recipe


Are you clueless about what to do with the ripe bananas sitting on the kitchen counter surrounded by fruit flies? And have to throw it away each time? 
You have come to the right place. 
I get that a lot in my house and that means it's time to bake! I usually bake banana walnut muffin for the kiddo. But this time I thought of baking some yummy dessert for the family. 
Today, I will share this recipe with you all, which is "Eggless Chocolate Banana cake". Although this cake tastes awesome plain, I will add white chocolate glaze to this cake for extra flavor.

Let's transform these bananas into something wonderful with me. 


You will need these ingredients


I N G R E D I E N T S



CAKE

Ripe Bananas 2
Sugar 1 Cup
All Purpose Flour/ Maida  Cups
Cocoa Powder ½ Cup
Oil ½ Cup
Vanilla Extract 1 Tsp
Vineger 1 Tsp
Baking Powder ½ Tsp
Baking Soda ¼ Tsp
Salt ¼ Tsp
Chopped Walnut ½ Cup
Chocolate Chips ½ Cup


WHITE CHOCOLATE GLAZE

White Chocolate 2 cubes
Heavy Cream 2 Tbsp
Butter 1 Tbsp

P R E P A R A T I O N



  1. Preheat oven to 350F or 180 C. And grease a baking pan and keep aside.
  2. In a mixing bowl, whisk together 2 ripe banana and sugar until completely mixed and forms into a thick purée like texture.
  3. Add oil, vanilla extract, vinegar and whisk until mixed completely.
  4. Sift all-purpose flour, cocoa powder, baking powder, baking soda and salt together. And combine these dry ingredients to the bowl using  a mixer or spatula.
  5. Add chopped walnuts and chocolate chips and fold it in.
  6. Pour the cake batter into the greased baking pan and bake it in preheated oven at 350F or 180 C for 35-40 min. 
  7. Test to check whether the cake is done, insert a toothpick into the cake and if it comes out clean, cake is done else bake for another 5 min and repeat toothpick taste.
  8. In a glass bowl, add butter, heavy cream and white chocolate and microwave for 30 and mix with a spoon and microwave for 30 s again. Repeat this until chocolate melts.
  9. When the cake cools down, pour over the white chocolate glaze on the cake.
  10. Enjoy the cake!!

T I P S: 

  • Use little bit of vinegar in cake batter for a fluffier cake. When Vinegar is combined with Baking soda, it releases carbon dioxide, a gas that helps cakes and cupcakes rise as they bake. 
  • Toothpick test helps you know if the cake is baked completely, where you insert a toothpick into the cake and if it comes out clean, cake is done.
  • Adding a little salt to your cake is a fantastic ideas as it enhances the flavor of other ingredients. Salt also provides a balance to the sweetness of the cake.
  • Instead of scooping flour in the measuring cup, use spoon and level method for measuring flour. After you’ve spooned the flour into the measuring cup, use the back of a knife to level off the top of the measuring cup. Wrong flour measurement, results in imperfect cake.
