Stuffed Capsicum/Bell Pepper


Ingredients 

Capsicum 4
Boiled potatoes 3
Paneer 50 gm
Garam masala 1 tbsp
Chopped cashew nuts 10
Cumin  powder 2 tbsp
Coriander leaves
Minced Onion 1
Minced Green chilli
Grated Ginger
Amchoor (Dried Mango Powder)

Preparation 

  1. Mash boiled  potatoes and paneer. Remove the stems from capsicum and remove seeds.

  2. Mix well potatoes, paneer, cashewnuts, amchoor, cumin powder, garam masala powder, coriander leaves and salt. Keep aside. 
  3. Preheat oven to 225ÂșC. 
  4. Heat oil in a pan and add onion. Cook till translucent and add ginger and green chillies. 
  5. Mix in potato mixture and continue to cook for two minutes. 
  6. Stuff this mixture into the prepared capsicum shells, sprinkle cheese and place on baking tray.

  7. Bake capsicums for 15 minutes. Serve immediately.
Tip: 

  1. Slice off capsicum thinly from the bottom so that the capsicums stand steady when placed on a baking tray.
  2. Stuffed Capsicums can also be cover cooked in a pan with little oil on slow heat.
