Couscous Salad

Ingredients

Couscous 1/2 cup
Water 3/4 cup
Olive oil 2 tsp
Lemon juice 1 -2 tsp
Lemon zest 1/2 tsp
Salt to taste
Chopped Cucumber/ zucchini
Diced Tomato
Chopped Parsley/cilantro
Chopped Lettuce
Black Pepper (optional)
Minced Scallions 2 tsp
Minced green garlic 2 tsp

Serving Size 2

Preparation

  1. Bring water, 1 tsp olive oil, lemon juice and salt to a boil over high heat and add the boiled water to couscous in a bowl. Leave it for 4-5 min or as per the time mentioned on the couscous pack. I used "Rice Select" brand of couscous. There are some couscous types available in market that needs to be soaked in water overnight. The one I used is ready only after 4-5 min of soaking.
  2. Fluff it up with a fork and let it cool for sometime.
  3. Add lemon zest, cucumber, tomato, scallions, green garlic, parsley, lettuce and black pepper. Mix everything.
  4. Couscous salad is read to be served.
