Ingredients
Zucchini 2 medium sized
Grated parmesan cheese 1/4 cup
Bread crumbs 1/4 cup
Salt 1/8 teaspoon
Ground black pepper
Serving Size 4
Preparation
- Preheat oven to 450F and grease a baking sheet with oil spray.
- Wash and slice zucchini into 1/4 inch thick rounds. Toss zucchini in a medium sized bowl with olive oil.
- In a small bowl, mix together parmesan cheese, bread crumbs, salt and pepper.
- Dip each zucchini slice into this mix, coating it well from all sides. Press a little so the coating stick to the slices well. Place the coated slices on greased baking sheet in a single layer. Do the same for all slices.
- Bake for 25-30 mins or until it's brown and crispy.
- Serve immediately.
