Calling out all the Uttar Pradesh (उत्तर प्रदेश) folks to go back in childhood memories with this very easy and nostalgic recipe of Daal ki Dulhan / Daal ka Dulha (दाल की दुल्हन/ दाल का दूल्हा)/ Daal Pithi. This is one of the one pot comfort food, for most of the people of Uttar Pradesh, which can be made with easily available ingredients in every Indian Household.

Ingredients
For Daal
Arhar/ Toor Daal 2 CupWater 3-4 Cup
Salt to taste
Turmeric Powder 1/2 Tbsp
Finely Chopped Tomatoes 1/2 Cup
Asafetida 1/4 Tsp
For Dough
Wheat flour 2 cupSalt 1/2 Tsp
Water to make dough
For Tempering/ Tadka
Ghee 3 TbspCumin seeds 1 Tbsp
Whole Dried Red Chili 1-2
Asafetida a pinch
Finely Chopped Onion 1/4 Cup
Chopped Green Chili 1/ Tbsp
Red Chili Powder for color (Totally optional)
Preparation
- Wash and soak daal for about 15-20 min.
- In a mixing bowl, add wheat flour, salt and water and knead a soft dough.
- Take a portion of dough and roll it into a big circle (like a big roti), and use a circle cutter to cut many small circles out of it.
- Take the small dough circles, lift opposite sides and bring together at the centre, then lift the other two ends and bring it to the centre, giving it a flower-like shape. These are called Dulhan (दुल्हन). Make these Dulhan(s) and keep aside.
- In a pressure cooker or instant pot, add water, daal, salt, turmeric, asafetida and chopped tomatoes.
- Add Dulhan(s)/ pithi to the daal, close the pressure cooker's lid and cook for approx 10 min. Keep the heat high for 4-5 min initially and once pressure builds up, turn the heat low for the rest of the cooking. If you are using instant pot, just turn on the pressure cook mode and set the timer for 8 min. If you don't have either of these, cook daal the traditional way in a pot with covered lid, this process will be time taking.
- For tempering, heat the a small pan. Add ghee to it.
- Further add Cumin seeds, asafetida and dried red chili.
- Add chopped onion.
- Add green chili.
- Cook till onions turn light borwn.
- Pour the tempering over the prepared daal and mix.
- Daal ki dulhan is ready to be served. It can also be enjoyed with white boiled rice. Enjoy!!
