Garlic Greens Pickle
Pickle! Although many countries enjoy it but the connection India has with Pickles is beyond words. Indians can pickle almost anything be it carrot or ginger or garlic or mango or chilli or chicken or fish or tomato or what not. And when I talk about Indian Pickles, it's not just vegetables fermented in vinegar, it's a mix of lots of flavors usually soaked in mustard oil.
Pickling is an art and tradition well practiced in India since long ago, which is diminishing over time. Let's keep the legacy alive and learn to pickle. Some pickles require cooking some don't, I am sharing the recipe of a pickle which doesn't require cooking: Garlic Greens Pickle!

This a very spicy pickle and you are going to love it if you like to eat super hot and spicy pickles.
You can add it to any meal as a side to spice up the whole meal.
You will need the below ingredients to get started.
Ingredients
Garlic greens 1 cup
Ginger big chunk (approc 3 inches)
Mustard oil 4 Tbsp
Cumin powder 1 Tbsp
Salt to taste
Turmeric 1 Tsp
Asafoetida 1/4 Tsp
Aamchoor/ dry mango power 1 Tsp
Preparation
- Roughly grind/ crush garlic greens, ginger and green chilis.
- Add mustard oil(just enough to coat well), salt, turmeric, heeng, aamchoor and cumin powder. That's it. Store in air tight glass jar/ container.
If you don't have garlic greens, use garlic instead.
