Strawberry Ice-Cream
Summers have started and so does the craving for ice-cream. Isn't it awesome when you can make your own ice-cream at home? Are you already nodding in Yes?
Why the wait then, let's get started with this wonderful recipe of strawberry ice-cream. You can use any fruit of your choice, preferably seasonal fruits, for the freshness and fruity blast in your mouth.
I have used lemon in my recipe, not just to introduce a hint of sourness but to give a hint of freshness too. Believe me, it makes a lot of difference when you add a hint of lemon juice to your ice-cream.
I have also used honey to add the silky texture to my ice-cream. If you or your kids are allergic to honey, you can skip this part.
Ingredients
Fresh and roughly chopped Strawberries 2 cups
Sugar 1 cup (or less if strawberries are sweet)
Honey 2 Tbsp
Lemon juice 2 Tbsp
Heavy cream 1 cup
Vanilla extract 1/4tsp
Preparation
- Mix chopped strawberries with sugar, honey and lemon juice and keep aside for at least 30 min.
- If you don't like the fruit chunks in ice-cream and like it smooth, you can blend it to a smooth paste. I like fruit chunks in my ice cream, so I simply crushed the strawberries with a fork.
- Now in a separate bowl, pour 1 cup of heavy cream.
- Add vanilla extract.
- Beat it until peaks are formed.
- Now slowly fold the strawberry mix into it, until thoroughly mixed. Don't over do it. Follow fold and cut technique to maintain the whipped cream's fluffiness.
- Transfer to a suitable bowl for freezing.
- Freeze the ice-cream for 6-8 hours.
- Take out the ice-cream 5-10 min in advance before serving. Enjoy and let me know how you liked the recipe.
