Quinoa Salad


When you want to eat something quick and healthy but are bored of greens, try this Quinoa salad. Quinoa is a protein packed grain easy to cook, great alternative to rice and tasty too. 

Ingredients


Quinoa (Prefer Organic) 1 cup
Water 11/4 cup

Finely Chopped
    Onion 1 tbsp
    Tomato 1 tbsp
    Coriander Leaves 1/2 tbsp
    Parsley Leaves 1/2 tbsp (optional if already added coriander leaves))
    Cucumber 1 tbsp
Lemon Juice 1-2 tsp
Olive oil 1/2 tsp

Preparation 


  1. Boil quinoa with water as you would boil rice, keep aside to cool down.    
  2. In a bowl mix together all other chopped ingredients with lemon juice and olive oil.
  3. Now mix cooled quinoa and it's ready to be served.
